To make these delicious salty muffins you need the following ingredients:
- 1 chicken breast
- 3 eggs
- 1 carrot
- 2 onions
- 500gr. of white rise
- 150gr. of grated cheese
- Salt and Pepper
Start the preparation by cooking the grilled chicken breast until it’s golden brown. Once it’s properly cooked, shred it into very small pieces. For this you can use a pair of scissors or a fork and knife. Use what’s easier and faster for you.
Next, beat the three eggs in a bowl. Add the grated carrot, two chopped scallions, the boiled white rice and finally the chicken. You can add a pinch of salt and pepper. Now, mix all the ingredients well until the paste is as homogeneous as possible.
Once this is done, you must start baking. To do this, divide the dough into small portions. Then, take a tray to make muffins, sprinkle the holes with a little olive oil and place a portion of dough in each. And add some grated cheese on top.
The last step is to place the tray inside the oven and let it cook for about 15-20 minutes at 200ºC.
